Even Josh knows to cook thoroughly. "I'll make sure its well done cause a lot of people don't like it medium rare when it's outdoor food." When someone gets a stomach bug they are more likely to chalk it up to the meat they ate rather than consider the vegetables or fruit they downed at the same sitting. Take cantaloupe; its bumpy surface can harbor bacteria. When an unwashed melon is sliced, any bacteria are pushed by the knife into the fruit. And think twice about pre-washed bags of lettuce and spinach. "In the case of a leafy vegetable even if it states it's pre-washed, I would recommend that you wash it prior to use," says Altier. I recently wrote an article and posted it in my Mirror Athlete Blog, "Viking Big Meat Barbeque," and had an opportunity to video how I barbeque on a Weber while in Northern, CA. The choice of meat required 4 long hours of cooking to get in tendor enough to fall apart. In this part of the video, I only had the meat on for about 20 minutes. Unfortunately, you did not see the greate red golden colors, nor do you see the great plums of smoke. The point is, you get an ideal from the read what this type of cooking is all about. When I get a chance, I will fill more of this type of cooking later into the cooking phase of a "big Choice" cut of meat. The brisquet I used in the footage requires long slow cooking. I will use a nice cut of prime rib, or tri-tip in the next one to expedite the cook, show the color of the meat and the juices held within the meat after everything is done. This video demonstrate the Breeze smoker in action. Specifically, I am Breezing a pork shoulder (pulled pork, pork butt) for 11 hours, with very little effort. It rained overnight while the meat cooked, and due to the patented temperature control technology and fully insulated oven, there was minimal impact to the operating temperature. As is normal with any cook on the Breeze, I only had to interact with it 5 times... lighting, putting in the meat, one fuel refill, wrapping the meat in aluminum (not actually required... just my style), and pulling the meat off. The video includes the temperature profiles of the meat internal temperatures and oven temperature over the entire cook.
